On a hot summer evening, I like to prepare customized salads for my family. Traditionally Cobb salads include bacon and many other ingredients arranged in a fancy pattern, but I like to customize mine to suit our food preferences and my food allergies. Sometimes I arrange the toppings in rows, but usually just sprinkle them on as presentation is not my strong suit.
I do include chicken and garlic stir fried in olive and coconut oils, romaine lettuce, spinach, tomatoes, hard boiled eggs, red peppers, cucumbers, mushrooms, shredded cheddar cheese with a choice of salad dressing.
